“Triple’ ginger cake
Triple Ginger Cake. Sticky, moorish and warming. It is raining and raining in The Netherlands. Nigel Slater is right in his 2003 article in the Guardian: baking a cake is thé knee jerk reaction to torrential rains. These grey days in ‘low sky country’ are most suited for loads of ginger and spices.
Nigel recommends to let this cake sit for two days to mature. Alas, the two of us finished this recipe for eight in less than 48 hours.
